Mac and cheeses are so good, but it gets boring after a while. Well, why not mix them up a bit add a beer in it for good measure!! A not-so-traditional Mac and cheese with a Mexican flavor that makes it not so Mexican. It’s so good that you can not resist to come and get some more!!
This mac recipe is a classic dish that everyone recognizes. To tone down the spiciness, add in an IPA to spruce it up another level. Why? Well, why not !!!
Large pot or deep skillet
1 tbsp oil
1/2 Tbsp of garlic
One yellow onion, diced
Two jalapenos, seeded and minced
Three tablespoons chili powder
One tbsp smoked paprika
1 1/2 tbsp cumin
1 tbsp salt
One Can IPA
3 cups Shredded Cheddar
2 cups Guoda, shredded
A box of Macaroni
5 cups of milk
1/2 cup cilantro
Saute the onions until translucent, then add in the jalapenos and garlic. Cook until fragrant then deglaze with the IPA.
Cook down the beer a bit, then add in the milk, bring to a simmer.
Add in the chili powder, smoked paprika, cumin, and salt, then melt in the cheddar and smoked gouda.
Mix in the macaroni and simmer until the noodles are soft. You want to gradually stir occasionally to prevent the noodles from sticking to the bottom.
Once the noodles are soft, mix in the cilantro and ser it with a side of lime.
