Have cauliflower? Want your kids to get more vegetables? Then this mac and cheese recipe is for you. You kids, even your spouse, won’t tell the difference!!
Cauliflower Mac recipe is an excellent smart way for everyone to get their vitamins within their favorite food without knowing that they are eating healthily. It’s a win, WIN!! Cauliflower for the success, and of course yourself!!
Handle blender or blender
2 cups minced Cauliflower
4 cups of milk
3 cups American cheese, torn to bits
1 cup shredded mozzarella cheese
1 cup mild shredded cheddar
1/2 box of Macaroni
1 tsp of salt
One tablespoon of oil
In a large pot or deep skillet, saute the cauliflower until tender deglazes with the milk and let it boil until the cauliflower is super soft.
When the cauliflower is soft, take off the heat and with a handle blender, blend it up until smooth, then return to the heat.
Add the American, mozzarella, and mild cheddar to the cauliflower mixture. Melt the cheese within the mix.
Once the cheese is all melted, add in the noodles and bring the mixture to a simmer and cook till noodles are tender, soft. You want to make sure that you stir every once in a while, so the pasta does NOT stick to the pan.
Noodles are soft, then add the salt for some taste.
Serve it up as a side dish or a full meal and enjoy it.
